Knife sharpening is part of the process of maintaining a certain level of performance from any knife and our knives at Performance Edgeworks are no exception. Its the part of owning a knife that a lot of us are the most uncomfortable with. If you think you are alone in feeling this you are wrong. We were right there with you at one point as well. For us, this was due to not fully understanding what was really taking place during the sharpening process in the first place. This is a skill and a skills take time to perfect but in the end it is very satisfying once you achieve it. Mistakes WILL be made in the beginning. We recommend starting with knives you dont care about as much. Also, knives with shorter, straighter blades are easier to learn on than longer blades or ones that have more curvature along the cutting edge. With that in mind let me introduce you to Jon.
Jon at Japanese Knife Imports has dedicated his life to meeting with small makers in Japan and making their quality chef knives and sharpening supplies available to us in the United States. He also spends time with master sharpeners while he is there and enjoys teaching and sharing what he has learned.
