The Petty is as close as it gets to the American paring knife. This knife style is intended to work with ingredients in your hand as well as on the edge of the cutting board. It excels at small tasks that requires more control you get from the overall smaller size compared to a full sized chef knife. Lengths vary from 100mm to 150mm (4”-6”) with a blade heel height around 1.25”. Because of the smaller overall size of this knife, the blade geometry utilizes a 50/50 convex shape instead being asymmetrical like our other knife styles. we offer them in both a traditional shape as well as a K-Tip depending on your personal preference. They are available in both stainless as well as carbon steel. Stainless requires less maintenance during use and is what we recommend to most of our customers since its what most home cooks are accustomed to using. Carbon provides a superior cutting edge that will last longer and is easier to maintain but it requires additional care during use to prevent rust from occurring. A patina WILL occur on carbon blades which is a good thing as it makes the blade more impervious to moisture but will never be as rust resistant as stainless.
